Golden oat biscuits with coconut and golden syrup, crunchy at the edges and chewy in the middle.
Method
- Preheat oven to 160 °C and line two trays.
- Mix oats, coconut, flour and sugar in a large bowl.
- Melt butter with golden syrup in a small saucepan.
- Dissolve bicarb in boiling water, then stir into the butter mixture — it will foam.
- Pour the wet mix into the dry ingredients and combine.
- Roll tablespoons of dough into balls, place on trays and flatten slightly.
- Bake 12–15 minutes until golden. Cool on trays for chewy centres.
